A fine and well-aged Mexican spirit, with a complex and smoky flavor. Mezcal is a spirit made from the fermented juice of the agave plant. The agave plant, native to Mexico, is one of the oldest domesticated plants in the world. It takes approximately three years for the plant to grow, and then it can take up to twenty years for the plant to be harvested and made into mezcal. It is a complex, smoky, and sometimes bitter drink. It can be served straight or on the rocks, but most often is enjoyed in a cocktail.
