Instead of adding copious amounts of sugar, the distillers focused on selecting botanicals that impart a naturally sweet profile to accompany a host of more traditional bitter gin botanicals. Vanilla, macadamia nuts, hazelnuts, sarsaparilla root, tonka bean, and meadowsweet flowers bring soft, fragrant sweetness that’ll work well mixed with a crisp tonic and plenty of ice, garnished with a lemon wedge.

Distillery Information
The Spencerfield Spirit Company (the folks behind Sheep Dip and Pig’s Nose whiskies) introduced Edinburgh Gin in 2010. For the first few years they sourced gin made with Scottish grain and macerated their selection of Scottish botanicals in it. In 2014 they opened their own craft distillery in Edinburgh, allowing them to produce Edinburgh Gin under one roof (which also houses a bar – a good a place for one as any!). Following that, in 2016 they expanded their operations once again by kicking off a plan to build a second distillery in a disused biscuit factory in Leith!
