This gin right here is Batch #4 of Dornoch’s Experimental Batches series, all of which are made at the Scottish distillery using organic floor malted Odyssey barley – Philip and Simon Thompson (the chaps behind the distillery) are dedicated to making their tipples without the use of neutral grain spirit! Batch #4 shows off the character of the gin excellently as it features a very low botanical content – 10 grams per litre charged (many producers use around 35-40 grams per litre charged!). As such, this might not make the best gin for mixing with tonic, but does go well with ginger beer.
