Liqueur: Ocho Cientos Silver Sotol
Ocho Cientos is handcrafted in Chihuahua, Mexico from the indigenous Sotol plant. After harvesting, the hearts of the plants are taken to the distillery where they are roasted in a 7-foot deep, rock lined pit oven, fermented and distilled in a traditional copper pot still.

Origin: Mexico
Sotol is the name of both the spirit and the plant from which it is made within its own denomination of origin in Chihuahua. A cousin to agave, it’s a smaller plant with fewer yields, only about 1/4 to that of a typical agave field. It’s also more fibrous, which requires it be chopped, not pressed, like agave. At Hacienda de Chihuahua, the Sotol is roasted and steamed, then double-distilled in small, copper stills. The blanco is bottled unaged.
Ocho Cientos Silver Sotol Tasting Notes
Nose: The nose of this mezcal opens with smoky bacon and fireside smoke aromas, with wood and spice.
Palate: Lovely, mild on the tongue with a slight burn at the end.
Finish: Perfect, long lasting finish.
