Distilling Mt. Defiance’s Cassis Liqueur requires their head distiller to take a round-trip to New York. One of Mt. Defiance’s key ingredients is black currant, but Virginia still has a ban on the fruit’s cultivation. Inspired by the black currant liqueurs of France, the New York black currants are steeped in high-proof alcohol for three months to impart the berry’s bitter and fruity characteristics. Before bottling, it’s sweetened with beet sugar.
