Kimo Sabe mezcal was produced using a combination of new traditions–agaves steam-cooked in ovens, then milled and old traditions–agaves roasted in open pits then crushed with tahonas. These two batches ferment separately and then are blended together before distillation. The third distillation is done in a pot-still.

Nose: Cinnamon, nutmeg and allspice.
Palate: Toasted coconut, orange peel, marzipan.
Finish: Christmas Spice finish.

Kimo Sabe Joven: Albedo is a mezcal handcrafted in Mexico. Kimo Sabe founders Jim and Ashley Walsh began their career in the world of chocolate. After finding success in the chocolate industry, they decided to apply their considerable talents to agave.
Using techniques they’d developed with cacao, the Walshes planted 1,200 hectares of agave in Mexico, which are allowed to ripen for 8 years before they are harvested and distilled as Joven: Albedo.
