As the Thanksgiving holiday nears, I’ve been putting a lot of thought into how drinks are going to factor into the occasion. Sadly, I won’t be orchestrating the usual flourishes of a big family gathering, but I’ve managed to reframe the day as a welcome opportunity to keep things simple, which is why I plan to go all in on bubbles. Sparkling wines are incredibly versatile—they pair well with almost every type of food, from cheese to roast turkey to dessert. Plus, they epitomize a celebratory spirit.
