Give the label a close look; it’s aged in months, not years. Twelve months, to be exact. But for a young one, it holds its own at the dinner table. Diamond State Bourbon Whiskey is 65% corn, 25% rye, and 10% six-row malted barley. The grain was milled, mashed, and fermented in-house and then double distilled in the distillery’s copper Vendome pot still before being aged and later bottled at 94 proof.

Diamond State Straight Bourbon Whiskey Tasting Notes

Nose: Licorice, anise, leathery fruit like raisins. Toasted maple, browned sugar, and a hint of black pepper.

Palate: Vanilla-forward, quite sweet. Mixed with heat and acid that was hard on the tongue – lemons, maple, and cinnamon syrup.

Finish: Potent, it lingered long in the throat.

Distillery Information

Painted Stave Distilling opened in 2013 in a restored 1940s movie theater in downtown Smyrna, Delaware. Their facility includes a 4,000 sqft production floor that houses their mashing, fermenting and distilling equipment, a 40 seat craft cocktail bar, an art gallery and event space that is available for private gatherings, and soon to be completed outdoor Cocktail Garden and 4,800 sqft barrel storage facility. They produce a wide range of spirits including Straight Bourbon, Straight Rye, Western Dry Gin, the world’s only Scrapple Flavored Vodka, and numerous experimental releases from time to time.
