Rum: Cruzan Black Strap
A traditional, heavier rum made from the blackstrap molasses of sugar cane. In sugar refining, molasses is separated from the sugar crystals after each of three boiling or extraction processes that sugar cane goes through. The third and final separation is called blackstrap.

After the sugar makers have extracted everything they can from the cane juice, blackstrap molasses remains. It’s this molasses that lends its name to Cruzan Rum’s most interesting product: a dark rum with such a unique flavor profile, it cannot be substituted for. Made on the island of St. Croix, this column-distilled rum is aged one to two years in ex-Bourbon barrels and flavored with molasses.
Cruzan Black Strap Rum Tasting Notes
Nose: The tasting room with aromas of pancake syrup, molasses, vanilla, and hints of fennel. On nosing, the spirit makes its youth known with a hefty dose of astringency that runs counter to the bakery invitation given moments earlier.
Palate: The rum enters with some astringency and spice, but is immediately attenuated by the sweet molasses. Again, there is ample pancake syrup, along with vanilla and caramel. Subsequent sips yield a bit of coffee, then citrus and spice, namely lemon zest and cardamom.
Finish: Despite being full of robust flavors, the bitter finish is thin and short.
Distillery Information
The Cruzan Rum Distillery (formerly known as Estate Diamond) has been in operation for more than 250 years. The distillery is the largest supplier of American private and distributor label rum. Cruzan Rum also makes a pure cane distillate alcohol (in 189-proof), which can be found for sale in the medicine sections of many grocery stores in the U.S. Virgin Islands. Cruzan is one of two rum distilleries which, due to their place in American history, are part of the American Whiskey Trail.
