Cómplice de Adventura is a joven mezcal produced using 100% agave Espadin by Mezcalero Ignacio Martínez in San Dionisio Ocotepec, Oaxaca. After the agaves reach maturity after 8-10 years they are harvested and cooked in a river-stone pit oven. The cooked agaves are crushed by a horse-drawn tahona. After fermenting in oak wood vat, it is double distilled in copper and stainless steel stills. This mezcal has short but intense fruity tones and a long finish that brightens the palate.
