Champagne Savart (labelled as Frederic Savart) is a small Champagne producer making broad portfolio of sought-after wines in small quantities, from just 4 hectares (10 acres) of Pinot Noir and Chardonnay vines. These are located in Ecueil and Villers-aux-Noeuds, just south of Reims. These holdings are divided between 50 small plots, all of which are rated Premier Cru. The soils of Ecueil tend to be more sandy, with some mid-slope clay. Those of Villers-aux-Noeds are more chalky. Annual production across the Savart range reaches around 35,000 bottles per year. Over half of this is devoted to L’Ouverture, a 100 percent Pinot Noir Blanc de Noirs. Half the base wine is fermented in neutral barrels, the rest in stainless steel. It has a dosage of 7 grams per liter sugar. Winemaker Fred Savart does not induce malolactic fermentation as a matter of course. However reserve wines from older vintages (which have seen more temperature changes which trigger the process) bring a component of malolactic fermentation to multi-vintage blends. Around nine wines are made in total. The rest of the portfolio has variations in grape variety, dosage levels, use of oak and the degree of malolactic fermentation. Another Pinot Noir, Expression Nature, is made from older vines in Eceuil, vinified in barrel, and bottled with zero dosage. L’Accomplie is a 80:20 Pinot Noir – Chardonnay with 5g/l dosage. The Bulle de Rosé comprises around 70 percent Pinot Noir (white wine), 22 percent Chardonnay and 8 percent Pinot Noir red wine. The white wine component is a 50:50 split between reserve stocks and the current vintage; dosage is 6g/l.
