The history of Domaine H. Billiot begins at the beginning of the 20th century when Louis Billiot and his press in Ambonnay produced grape juice for Mumm and Moët & Chandon. Even then, he was producing a small amount of his own champagne. It can be attributed to his grandson Henri that the company changed from a grape supplier to a Recolte manipulator. Son Serge took over the vineyard work in 1954, expanded the champagne portfolio and brought the winery to its current reputation. In 2011 the scepter was handed over to daughter Laetitia, whose name also bears the house’s Prestige Cuvée. Since then she has tried to rejuvenate the image and the external presentation of the domain. Billiot’s five hectares are all in Ambonnay and are spread over 18 plots. With the exception of one parcel, they are all located in the top-quality middle section of the respective vineyard, so Billiot’s champagne transports the classic Ambonnay terroir particularly well: “The classic Ambonnay terroir produces vinous, powerful champagne,” says Laetitia, “but they can also be very fine and rich in finesse and have great storage potential. ” H. Billiot’s champagnes are mainly characterized by Pinot Noir, are very vinous, full-bodied and full of character. They are expanded in the enamel tank, do not undergo malolactic fermentation, are not filtered and are mixed with about 7 to 9 g / L dosage.
