Nose: Dried apricot and vanilla buttercream, with coconut cake and biscuity malt.

Palate: Cinnamon French toast and peppery oak, alongside crisp orchard fruit and hints of peaches and cream.

Finish: Oak char, spice and dried apple.

“Bimber Distillery, founded in London in 2015 by Polish immigrants Dariusz Plazewski and Ewelina Chruszczyk, grew from a family distilling passion in Poland, focusing on handcrafted, traditional single malt whisky using English barley, slow fermentation, and direct-fired stills, releasing its acclaimed first whisky in 2019 and quickly becoming known for quality and unique London-themed collaborations, though its owner faced legal issues leading to relinquishing control in 2024.”
