Vignobles du Hayot is a wine business based in Château Andoyse in Barsac, in southern Bordeaux, and best-known for its range of sweet, white Sauternes wines, including Château Romer du Hayot, given Second Growth status in the 1855 classification of Sauternes and Barsac. The family business dates back to the acquisition of a portion of Château Romer in the commune of Fargues (in the Sauternes appellation) by the Hayot family. There are conflicting reports as to when the occurred with most sources indicating the Hayot family acquired their portion of the estate in the early 20th Century although the Hayot website itself indicates this occurred just prior to the classification in 1851. The wider Romer estate likely dates back to the 17th Century and was awarded Second Growth status in the 1855 Classification. It is now divided into two portions (both retaining their 1855 status): the 3.5 hectare (8.6 acre) Château Romer now forms part of Bordeaux bigwig Bernard Magrez’s portfolio of estates while Château Romer du Hayot (nine hectares/22 acres) is one of the flagship properties of the Vignobles du Hayot portfolio. The estate is planted predominantly to Sémillon with roughly 10 percent Sauvignon Blanc. Grapes are hand-harvested in successive passes (called “tries” in French), picking only the most botrytis-affected bunches. Wines are pressed and partially fermented in oak with aging in barrel and tank for two to three years. Depending on the vintage, 10,000 to 30,000 bottles are produced annually. A top cuvée, Délicius de Romer du Hayot has been produced from selected batches as has a second wine: Le 2 de Romer du Hayot. Other labels in the Vignobles du Hayot portfolio include Château Andoyse du Hayot, Château Guiteronde du Hayot, Château Mayne du Hayot and Château Camperose du Hayot – all produced under the Sauternes appellation. The sweet white Château Mathalin du Hayot and dry white Château Fleur d’Andoyse are made under the Graves Superieures and Graves titles, respectively.
