Maria Joven is 100% Espadin Agave, cooked in a sealed, stone oven fueled by wood logs. The juice is then extracted via Tahona and horse, and fermented (with the fiber) in wooden tanks. Maria Mezcal is then double distilled in a small stainless steel alambique with copper head and coil.

Maria mezcals are named for the Dona Maria Chagoya distillery in Oaxaca that craft their spirits from 100% espadin agave. According to Tequila.net, the agave is cooked in stove ovens heated by wood fire and then fermented in wooden tubs.Maria Joven mezcal is un-aged and bottle crystal clear (silver). There is a label for both with, and without, the notorious mezcal “worm” in the bottom of the bottle.
Maria Joven Mezcal Tasting Notes
Nose: Cooked agave.
Palate: It has a full body, a light hint of mesquite, wild herbs and citric flavors but most notable is the true smoky maguey flavor.
Finish: Sweet and clean.
