Fermented spontaneously in 350L barrels, just like his Chardonnays. From 50-year-old vines in the Hautes-Côtes, Pierre Yves-Colin’s Bourgogne Aligoté offers up aromas of crisp orchard fruit, white flowers and beeswax. Medium-bodied, fleshy and incisive, it’s bright and elegantly fleshy, with a nicely defined, saline finish. Steely, fresh, a palate that recalls Chablis from style if not flavour. Lots of juicy energy in the finish”
