Distillery Information
Still Austin Whiskey Co. was founded in Texas with the aim of creating grain-to-glass whiskey using locally sourced grains, placing strong emphasis on controlling every stage of production. Their first bottle releases date from around 2020, during a period when many craft distillers were emerging despite challenging conditions. Their master blender, Nancy Fraley, has been instrumental in selecting and blending barrels to bring complexity and balance, working especially to manage rougher elements from young spirit. Because Texas’s heat accelerates maturation, Still Austin uses techniques like “slow water reduction” (adding small amounts of water during aging) to mitigate harsh phenolics and maintain balance. The distillery continues to explore aging potential in the Texas environment, experimenting with finishes, warehouse techniques, and extended aging regimes.
